Please note that very little coconut flour is needed in baking. You have to substitute 1 cup of wheat flour with ¼ cup of coconut flour. The other important thing is that coconut flour has a tendency to form clumps. Always use more eggs to avoid it and beat the flour thoroughly with other ingredients. It blends easily with other types of flours.
Coconut Baking Flour can be added to smoothies or milkshakes to increase calorie content or it can thicken soups or stews.
You can use the coconut flour in pancakes: take 3 eggs, ¼ cup of Coconut Baking Flour, ¼ cup of water and 1 teaspoon of sugar. Mix all ingredients in a bowl and put some butter onto the heated pan (you can also add some coconut oil).
